
Zucchini Pasta with Mushrooms

You can also sprinkle the pasta with chia seeds, any seeds, or add Parmesan on top.
Ingredients
- Courgette 2 pieces
- Olive Oil 5 tablespoons
- Brazil Nuts 0 oz
- Fresh Mushrooms 10 oz
- Fresh Mint 1 bunch
- Lime Juice 1 piece
- Avocado 1 piece
- Ocean salt to taste
- Ground Black Pepper to taste
Step-by-Step Guide
Step 1
Slice the zucchini into ribbons using a vegetable peeler.
Step 2
Blend the nuts, avocado, mint, lime, one and a half tablespoons of olive oil, and add salt and pepper. The mixture should be homogeneous but not too smooth, so you can feel the texture of the nuts.
Step 3
Slice the mushrooms and add them to a heated skillet with olive oil, season with salt and pepper. Sauté for five minutes.
Step 4
Mix the sliced zucchini with the pasta. Serve on plates and top with the mushrooms.
