Fusilli Bucati Pasta with Red Pepper Sauce
Ingredients
- Olive Oil 2 tablespoons
- Canned roasted red peppers 5 oz
- Onion ½ head
- Carrot 1 piece
- Fusilli pasta 10 oz
Step-by-Step Guide
Step 1
Heat the oil in a saucepan over medium-high heat.
Step 2
Add the peppers, onion, and carrot, and sauté for 5 minutes until the onion begins to brown.
Step 3
Add ¾ cup of water, cover with a lid, reduce the heat to medium-low, and cook for 20 minutes.
Step 4
Meanwhile, cook the pasta according to the package instructions.
Step 5
Remove the vegetable mixture from heat and blend it in a blender. Season with salt and pepper to taste if desired.
Step 6
Drain the pasta and return it to the saucepan. Mix with the pepper sauce.
