Description
Zucchini should be fried in hot oil in small batches, so they don’t crowd each other and cook quickly. If you add all the zucchini to the saucepan at once, the oil temperature will drop significantly, and the zucchini will end up boiling in the oil rather than frying.
Ingredients
- Courgette 0 lbs
- Wheat Flour 0 oz
- Chicken Egg 2 pieces
- Red Curry Powder 1 tablespoon
- Salt to taste
- Vegetable Oil 5 fl oz
- Lemon 1 piece
Step-by-Step Guide
Step 1
Lightly beat the eggs. Mix the flour with curry powder and salt. Add the eggs and whisk the mixture of flour and eggs into a runny batter.
Step 2
Cut the zucchini into thin strips and coat them in the batter.
Step 3
In a saucepan, heat vegetable oil until it's almost smoking, and quickly fry the zucchini coated in batter for about thirty seconds to a minute. Use a slotted spoon to remove them from the hot oil and place them on several layers of paper towels to drain excess oil. Serve drizzled with lemon juice.
