Zucchini in Marinade, Grilled
Ingredients
- Zucchini 20 oz
- Lemon Juice 0 fl oz
- Mustard 1 teaspoon
- Garlic 2 cloves
- Sugar ½ teaspoon
- Italian herbs to taste
- Salt to taste
- Extra virgin olive oil 4 tablespoons
Step-by-Step Guide
Step 1
First, place a grill pan on the stove and heat it well. Meanwhile, prepare the ingredients.

Cut the zucchini into regular rounds or diagonal slices no thicker than 1 centimeter (preferably 0.5-0.7 cm).
Step 3
Next, whisk together the lemon juice, salt, sugar, pepper, Italian herbs, mustard, and crushed garlic. Then, start adding the olive oil (I usually use Maestro de Oliva) — it's best to add it one tablespoon at a time while constantly stirring.
Step 4
After that, you'll need a bag to place the sliced zucchini in and pour the marinade over them. The most important thing is to remove as much air as possible from the bag, then leave it in the refrigerator for at least 1 hour to allow the vegetables to soak in the flavors. You can even leave it for 2-3 hours; it won't hurt, I've tested it. I didn't flip the bag after half an hour, but the flavor still turned out quite rich.
Step 5
By this time, the pan should be well heated, so you can reduce the heat to medium or slightly below medium (depending on the power and type of your stove). Before placing the slices on the pan, let the excess marinade drip off — otherwise, too much liquid in the pan will instantly evaporate, creating a nice cloud. Grill for about 5 minutes on each side as usual.

Serve as a standalone appetizer or as a side dish. Enjoy your meal!
