Ingredients

  • Zucchini 5 oz
  • Egg 2 pieces
  • Wheat Flour 5 oz
  • Cheese 0 oz
  • Milk 5 fl oz
  • Olive Oil 1 tablespoon
  • Parsley 1 bunch

Step-by-Step Guide

Step 1

Grate the zucchini on a fine grater, sprinkle with salt, and let it sit for 15–20 minutes. Then, thoroughly squeeze out the water (the water is not needed).

Step 2

Lightly beat the eggs with salt, add oil, milk, zucchini, mix in the finely grated cheese and herbs, flour, and stir everything together. The consistency of the batter should be like thick sour cream!

Step 3

Heat a pan without oil, and spread the batter in a thin layer.

Step 4

Fry for 1–2 minutes on each side until golden brown.

Step 5

This portion will make 8 pancakes in a 16-centimeter diameter pan.

Step 6

Can be served with sour cream.
