Ingredients

  • Soy yogurt 20 oz
  • Lemon Juice 0 fl oz
  • Salt ½ teaspoon

Step-by-Step Guide

Step 1

Take a tall cup and place a funnel inside. Place a doubled piece of cheesecloth over the funnel and add the yogurt. Cover the cup with plastic wrap and place it in the refrigerator for 24 hours. After 24 hours, remove the yogurt from the refrigerator and pour out the liquid that has separated from the yogurt.

Step 2

Transfer the yogurt to a bowl, add salt and lemon juice. Mix everything well to create a cheese that can be spread on bread.

Step 3

Optionally, you can add some chopped green onions, dill, or other finely chopped herbs to the stracchino.
