Instead of truffle, you can drizzle the zucchinis with truffle oil.
Ingredients
- Young zucchini 5 oz
- Olive Oil 0 fl oz
- Truffle 0 oz
- Salt to taste
- Ground Black Pepper to taste

Prepare all the ingredients.
Step 2
Remove the core and seeds from the small young zucchinis.
Step 3
Slice the zucchinis into thin wedges.
Step 4
Place the wedges in ice water and let them sit for 10 minutes. They will become crisper.
Step 5
Dry the zucchinis and mix them with olive oil.
Step 6
Arrange the zucchinis on a flat plate, season with salt and pepper.
Step 7
Grate the truffle on top.
Step 8
Serve the zucchini carpaccio with sparkling wine.
