Zucchini Appetizer with Walnuts

Ingredients

  • Courgette 10 oz
  • Wheat Flour 0 oz
  • Walnuts 5 oz
  • Garlic 2 cloves
  • Onion ½ piece
  • Olive Oil 3 tablespoons
  • Hard Cheese 0 oz
  • 20% Sour Cream 2 tablespoons
  • Pickles 2 pieces
  • Lemon ½ piece
  • Salt to taste

Step-by-Step Guide

Step 1

Slice the zucchini into rounds about 7–8 mm thick. Sprinkle with salt, transfer to a colander, and let sit for 20 minutes to drain excess moisture.

Step 2

Chop the walnuts and garlic in a blender (not too finely).

Step 3

Finely chop the onion and sauté in olive oil until golden brown. This will add a light sweetness to the filling.

Step 4

Grate the cheese and mix it with the sautéed onion and walnuts.

Step 5

Squeeze the zucchini to remove moisture and coat in flour (if pea flour is not available, any other flour can be used).

Step 6

Lightly fry the zucchini in the remaining oil from the onion.

Step 7

Arrange the zucchini in a baking dish. Top each round with a bit of rich sour cream.

Step 8

Form small patties from the walnut mixture and place them on top of each zucchini round. Place everything in the oven on the top rack at 375°F for 10 minutes.

Step 9

Drizzle the finished appetizer with lemon juice and garnish with pieces of pickles.
