Zucchini appetizer with corn and basil
Ingredients
- Corn Cobs 6 pieces
- Olive Oil 1 tablespoon
- Young zucchini 1 piece
- Garlic 1 clove
- Coarse Salt to taste
- Ground Black Pepper to taste
- Fresh basil leaves 1 cup
- Champagne Vinegar 1 teaspoon
Step-by-Step Guide
Step 1
Cut the zucchini in half lengthwise, then slice into thin half-moons.
Step 2
Carefully cut the kernels off the corn cobs with a sharp knife.
Step 3
In a large saucepan, heat the olive oil over medium heat. Add the zucchini and minced garlic. Cook, stirring, for 1–2 minutes.
Step 4
Add the corn, season with salt and pepper. Cook for another 1–3 minutes until everything is heated through.
Step 5
Remove from heat and stir in the basil and vinegar.
