  • Macadamia Nuts 1 cup
  • Ocean salt to taste
  • Courgette 5 pieces
  • Cayenne Pepper 1 teaspoon
  • Tamarind Paste 1 cup

Step-by-Step Guide

Step 1

In a blender, blend the nuts with 1 cup of water and salt. Start with 0.5 cup and gradually add more until you reach a thick cream consistency.

Step 2

Cover the mixture with cheesecloth and let it sit for 8 hours or more. During this time, it will develop a sour cream flavor and form a gray crust. Remove the crust with a spoon, cover the cream, and refrigerate.

Step 3

Cut the zucchini into small pieces and marinate in cayenne pepper, tamarind paste, and a small amount of water for 15 minutes.

Step 4

Place the zucchini pieces to dry, topping each with a small amount of cream, and dry for 12 hours at 105°F until crispy.
