Zucchini and Squash Gratin with Cheese Crust

Ingredients

  • Butter 2 tablespoons
  • Young zucchini 20 oz
  • Butternut Squash 20 oz
  • Shallot 2 pieces
  • Garlic 2 cloves
  • Coarse Salt to taste
  • Ground Black Pepper to taste
  • Panko breadcrumbs 5 oz
  • 10% cream ½ cup
  • Grated Pecorino Pepato Cheese 0 oz

Step-by-Step Guide

Step 1

Preheat the oven to 445°F.

Step 2

In a large skillet, melt the butter and add the thinly sliced zucchini, thinly sliced squash, thinly sliced shallots, and minced garlic. Season with salt and pepper. Cook, stirring, for 4–6 minutes until the vegetables are tender.

Step 3

Pour in the cream and cook until slightly thickened, about 5 minutes. Remove from heat and stir in 0.5 cup of breadcrumbs and the grated Parmesan.

Step 4

Transfer the mixture to a baking dish and sprinkle with the remaining breadcrumbs and Parmesan. Season with salt and pepper. Bake in the oven for 8–10 minutes until golden brown.
