
Zucchini and Carrot Frittata with Olives

You can add finely chopped olives to the casserole.
Ingredients
- Courgette 2 pieces
- Carrot 3 pieces
- Wheat Flour 4 spoons
- Chicken Egg 2 pieces
- Grated Pecorino Pepato Cheese 0 oz
- Pitted olives to taste
- Salt to taste
- Ground Black Pepper to taste
- Butter 0 oz
Step-by-Step Guide
Step 1
Grate the zucchini and carrot using a coarse grater.
Step 2
Mix the vegetable mixture with the flour and cheese. Stir well. Gently fold in the beaten eggs. Mix again, adding salt and pepper to taste.
Step 3
Transfer to a greased baking dish. Smooth it out. Brush the top of the casserole with vegetable oil or sour cream.
Step 4
Bake for 30-40 minutes.
