Young Spanish artichokes
Ingredients
- Salt to taste
- Garlic 1 clove
- Parsley 4 stems
- White bread 0 oz
- Olive Oil 2 tablespoons
- Champagne Vinegar 1 tablespoon
- Safflower Oil 2 tablespoons
- Spanish artichokes 20 oz
Step-by-Step Guide
Step 1
Wash the artichokes, clean them of dirt, and remove the tough leaves from the edges. Boil them in salted boiling water for 20 minutes until they become soft. Drain the water.
Step 2
Heat the sunflower oil in a pan and cook over medium heat until the artichokes are golden.
Step 3
Whisk the vinegar with a pinch of salt, then, while continuing to whisk, slowly add the oil. Add the breadcrumbs and finely chopped garlic. Mix well, pour the dressing over the artichokes, and serve immediately. They pair especially well with braised meat.
