Step 1

Preheat the oven to 320°F. Rinse the potatoes well and remove any damaged skin. In a large pot, bring salted water to a boil and cook the potatoes for about 5 minutes. Drain and dry them well. Transfer to a large bowl, drizzle with olive oil, and sprinkle with herbs, dried onion, and salt. Mix well.

Step 2

Spread the potatoes in a single layer in a baking dish and bake for 2 hours, stirring occasionally. Serve immediately.
