- New Potatoes 10 oz
- Olive Oil 0 fl oz
- Scallions 2 pieces
- Basil 1 bunch
- Salt to taste
- Ground Black Pepper to taste
Step-by-Step Guide
Step 1
In a pot, cover the young potatoes in their skins with water, place on the heat, and bring to a boil. Cover with a lid and cook for another 8 minutes until the potatoes are soft, then rinse well.
Step 2
In a skillet, heat the olive oil, add finely chopped green onions, and sauté briefly.
Step 3
Transfer the potatoes to a salad bowl, drizzle with warm olive oil, and add the onions with the oil from the skillet. Gently break the potatoes apart with a fork. Add salt, pepper, and mix to allow the oil to absorb. Sprinkle the potatoes with finely chopped basil leaves, season to taste, and serve.
