Young Potato Salad with Guacamole

Ingredients

  • New Potatoes 5 lbs
  • Salt to taste
  • Avocado 1 piece
  • Orange zest 2 teaspoons
  • Lime Juice ½ cup
  • Garlic 2 cloves
  • Cilantro 0 oz
  • Celery stalk 2 pieces
  • Mayonnaise 2 tablespoons

Step-by-Step Guide

Step 1

Boil the potatoes in a pot of salted boiling water until tender, about 20 minutes. Drain and cool.

Step 2

In a blender, combine the chopped avocado, lime zest and juice, minced garlic, cilantro, and mayonnaise. Season with salt to taste and blend until smooth. If necessary, add a tablespoon of hot water to achieve the desired consistency.

Step 3

Without peeling, cut the potatoes into small pieces and place them in a large bowl. Add finely chopped celery and dress with the guacamole. Gently mix and serve immediately, or chill first.
