Ingredients

- Brioche 5 oz
- Mayonnaise 0 oz
- Scallions to taste
- Citrus Zest Mix 0 oz
- Meyer Lemon Juice to taste
- Jelly Powder 0 oz
Step-by-Step Guide
Step 1
Quickly toast the brioche in a dry skillet until it forms a crust.
Step 2
Then heat in the oven at 355°F for 3 minutes.
Step 3
Cut the yellowtail and smoked eel into small cubes.
Step 4
For the dressing, mix mayonnaise with chopped green onions and lemon zest.

Add a little lemon juice.

Soak the green onions in ice water for 1 hour.
Step 7
Julienne the vegetables.

Mix the dressing with the fish.
