
Yellow Barbecue Sauce with Tomatillo

Description
Serve the sauce with grilled chicken, fish, and shrimp.
Ingredients
- Mixed tomatoes of different colors 5 lbs
- Tomatoes 25 oz
- Garlic 2 cloves
- Sugar ½ cup
- Vinegar essence 1 cup
- Spanish onions 3 heads
- English Dry Mustard 1 tablespoon
- Salt 1 teaspoon
- Chili Flakes ½ teaspoon
Step-by-Step Guide
Step 1
In a small saucepan, combine finely chopped tomatoes, finely chopped tomatillo, minced garlic, sugar (0.5-1 cup to taste), vinegar, finely chopped onion, mustard, salt, and pepper flakes. Bring to a boil, reduce to a low heat, and simmer for 2 hours until the tomatoes are soft. Let cool.
Step 2
Transfer half of the sauce to a blender and puree. Pour into a jar. Repeat the same with the remaining sauce.
