
Yeast Dough Pies with Kefir

Description
In Europe, it's no longer fashionable to have coffee with croissants for breakfast; croissants have been replaced by Russian-style pastries with various fillings. I am excited to share a fantastic recipe for quick yeast dough made with kefir, yes, you read that right, it’s made with kefir.
Ingredients
- Kefir ½ l
- Wheat Flour 0 lbs
- Vegetable Oil 5 fl oz
- Dry yeast 0 oz
- Apple 5 pieces
- Salt to taste
- Dried Apricots 5 oz
- Chicken Egg 1 piece
- Raisins 5 oz
- Milk 5 fl oz
- Sugar 5 oz
Step-by-Step Guide
Step 1
For the dough, mix kefir and vegetable oil in a pot or bowl. Heat over low heat for no more than 7–10 minutes (do not let it come to a boil!).
Step 2
In a separate bowl, mix the dry yeast with sugar (2 tablespoons) and warm milk. Allow it to rise. Add the yeast mixture to a pot with warmed kefir and oil. Stir, season with salt, and gradually incorporate all the flour while mixing. Place it in a warm spot for 20 minutes to let the dough rise. You can shape the dough into pies from this mixture.
Step 3
Roll the dough into sausages, cut them into pieces, and then roll each piece into small circles about 10 cm in diameter. Place the filling inside, pinch the center closed (like dumplings). Place them on a baking sheet seam side down. Brush the pastries with egg yolk. Allow to rise for 10 minutes.
Step 4
For the filling, chop the dried apricots and apples with their skin finely, mix them together, and add raisins, sugar, and lemon juice to this mixture.
Step 5
Preheat the oven to 390°F. Bake the pastries at 200 degrees for about 15–20 minutes.
