Winter Guacamole
Ingredients
- Avocado 3 pieces
- Spanish onions ½ heads
- Ground ancho chili pepper 1 piece
- Lime 2 pieces
- Pomegranate Seeds ½ pieces
- Cilantro 0 oz
- Salt to taste
- Ground Black Pepper to taste
Step-by-Step Guide
Step 1
Place a quarter of an onion and half a chili pepper into a mortar, add a pinch of salt, and use a pestle to mash everything into a smooth paste (you can also use a blender, but making guacamole in a mortar, especially one made of volcanic tuff, is much more authentic).
Step 2
Place the chopped ripe avocados into a mortar, having first removed the pit and skin. Mash the avocados, gradually adding lime juice. Once the avocados have turned into a coarse paste, mix it with the finely chopped remaining onion, cilantro, and the other half of the chili pepper — this should also be finely diced.
Step 3
Season with salt and pepper to taste, then mix the guacamole with the pomegranate seeds.
