
Wine Chicory

Description
If desired and if you have Parmesan cheese, place the chicory on a baking sheet, sprinkle with cheese, and bake for 15 minutes at 180 degrees Celsius. It’s very delicious when served with duck or even on its own! Enjoy your meal!
Ingredients
- Red Grape Juice 5 fl oz
- Chicory 6 pieces
- Vegetable Oil 2 tablespoons
- Sugar 1 tablespoon
- Salt to taste
Step-by-Step Guide
Step 1
Cut the chicory lengthwise into 4 parts.
Step 2
Heat the vegetable oil (not flavored!) in a skillet — use 1 tablespoon for each portion that fits in the skillet, as chicory absorbs very little oil.
Step 3
Place the cut chicory in the skillet and fry only one side. Once it is nicely browned, flip it to the other side; sprinkle with sugar, season with salt, and add freshly ground pepper, then pour in the wine (enough so that there is some for the next portion of chicory as well). Stir, but do not use spatulas; toss it by shaking the skillet sharply.
Step 4
Finish cooking the chicory and place it on a serving dish.
