Wine-Braised Lettuce with Tomatoes
Ingredients
- Olive Oil 4 tablespoons
- Onion 1 head
- Eel 6 pieces
- Tomatoes 3 pieces
- Dry White Wine 5 fl oz
- Bouillon cube ½ piece
- Salt to taste
Step-by-Step Guide
Step 1
Wash the lettuce and trim the stems. Slice the onion into thin rings. Peel the tomatoes and cut them into quarters.
Step 2
Heat the oil in a pot, place the onion at the bottom, and layer the lettuce on top in a single layer—arranging the tomatoes in between. Lightly salt, add the wine, and cook on low heat for 5 minutes.
Step 3
Crumble the bouillon cube into 475 ml of warm water and gradually pour in the resulting broth—cook for 15 minutes until the lettuce is tender. Transfer the lettuce to a long dish and drizzle with the sauce.
