  • Cucumbers 20 oz
  • Mild Chili Spice ½ pieces
  • Grated Ginger Root 0 oz
  • Peanut Butter 1 tablespoon
  • Meyer Lemon Juice 1 tablespoon
  • Soy Sauce 3 spoons
  • Sesame Oil 1 tablespoon

Step-by-Step Guide

Step 1

Peel the cucumbers and cut them in half lengthwise. Use a teaspoon with a pointed end to scoop out the flesh and seeds. Cut the cucumbers into half-moon segments about half a centimeter wide.

Step 2

Peel the ginger and grate it on a fine grater.

Step 3

Remove the seeds and inner membranes from the chili pepper and finely chop it. Add the ginger and chili to the chopped cucumbers.

Step 4

For the sauce, gradually mix lemon juice, soy sauce, and sesame oil into the peanut butter, stirring thoroughly until you achieve a smooth consistency.

Step 5

Place the sliced cucumbers in a bowl or a container with a tight-fitting lid. Pour in the sauce. Close the lid and shake the container to mix.

Step 6

Serve immediately.
