
Whole Poached Salmon with Lemon

A great and light appetizer for the New Year's table. Poached salmon is the most delicious — tender and juicy. It can be served with <a href="https://eda.ru/recepty/zakuski/zolotistij-molodoj-kartofel-s-limonom-rozmarinom-26203">young potatoes with rosemary</a>
Ingredients
- Salmon 5 lbs
- Onion 1 head
- Bay leaf 2 pieces
- Lemon 1 piece
- Champagne Vinegar 4 tablespoons
- Ocean salt to taste
- Ground Black Pepper to taste
Step-by-Step Guide
Step 1
Place the whole fish in a fish dish or simply in a deep baking dish.
Step 2
Pour cold water over the fish until it is completely covered.
Step 3
Add finely chopped onion, bay leaves, vinegar, and the lemon cut into 4 pieces. Generously sprinkle with salt and a little freshly ground black pepper.
Step 4
Cover with a lid or foil and bring to a boil on the stove. Turn off the heat and let the fish cool.
Step 5
Carefully transfer the fish to a cutting board and gently remove the skin, leaving the head, tail, and fins (it will look more impressive).
Step 6
Transfer the fish to a serving platter and garnish with herbs and lemon wedges.
