
Wet Brine Bacon

Description
How to brine bacon in a wet method to make it juicier.
Ingredients
- Lard 1½ kg
- Garlic 15 cloves
- Coarse Salt 3 spoons
- Bay leaf 3 pieces
- Allspice berries to taste
- Green peppercorns to taste
Step-by-Step Guide
Step 1
Prepare the necessary ingredients.
Step 2
Pour water into a pot and add salt (one tablespoon per liter of water).
Step 3
Add the bay leaf and peppercorns. Bring to a boil, then remove from heat and let cool to 140°F.
Step 4
Place the pork fat in any suitable container with the skin side up, and pour warm brine over it.
Step 5
Add 5 cloves of garlic, halved. Place a weight on top and leave at room temperature for 3 days.
Step 6
After 3 days, remove the lard from the brine.
Step 7
Pat dry with paper towels.
Step 8
Make cuts in the lard every 5-7 cm and stuff it with halves of ten cloves of garlic.
Step 9
Cover with plastic wrap and refrigerate for 2 days.
Step 10
Serve the lard slightly chilled with black bread.
