  • Salt 1 tablespoon
  • Watermelon 5 lbs
  • Vegetable Oil 2 spoons
  • Red Curry Powder 1 tablespoon
  • Dried Chili Pepper 2 pieces
  • Garlic 4 cloves

Step-by-Step Guide

Step 1

Remove the seeds from the watermelon and cut off the thin dark green skin. Use a knife to separate the flesh from the pale green rind, then chop everything into cubes and place them in separate bowls.

Step 2

In a saucepan over medium heat, heat the canola oil. Sauté the golden curry and finely chopped red chili pepper for two to three minutes. Add the minced garlic and cook, stirring, for about thirty seconds until golden. Stir in the chopped watermelon rinds, season with salt. Simmer for about seven minutes until a golden crust forms (during this time, the liquid should nearly evaporate completely).

Step 3

Pour one cup of water into a saucepan, cover with a lid, and simmer on low heat for about ten minutes, until the watermelon rinds become tender. Then add the diced watermelon flesh. Increase the heat and cook until done, stirring constantly, for about five minutes.
