Watermelon Carpaccio with Prosciutto

Ingredients

  • Prosciutto 6 pieces
  • Watermelon 5 lbs
  • Scallions 2 stalks
  • Coarse Salt to taste
  • Ground Black Pepper to taste
  • Olive Oil 2 tablespoons

Step-by-Step Guide

Step 1

Preheat the oven to 390°F.

Step 2

Arrange thin slices of prosciutto on a baking sheet in a single layer and place in the oven for 6–7 minutes until crispy. Let cool and break into small pieces.

Step 3

Remove the rind and seeds from the watermelon and cut it into thin slices. You will only need half of the watermelon. Transfer to a plate and chill until serving.

Step 4

Finely chop the green part of the onion.

Step 5

Sprinkle the watermelon slices with salt and pepper, then drizzle with olive oil. Top with green onion and pieces of prosciutto.
