Warm sweet and sour radicchio appetizer with raisins and pine nuts
Ingredients
- Olive Oil 4 tablespoons
- Onion 1 head
- Sugar 2 tablespoons
- Apple Cider Vinegar ½ cup
- Radicchio Salad 2 bunches
- Light Raisins, Seedless 0 oz
- Salt 1½ teaspoons
- Ground Black Pepper ½ teaspoon
- Pistachios 2 tablespoons
Step-by-Step Guide
Step 1
Heat the oil in a large skillet over medium heat. Add the thinly sliced onion and sugar and sauté until the onion is golden brown, about 7 minutes.
Step 2
Add the vinegar and stir well. Then add the chopped radicchio, raisins, salt, and pepper. Stir and cook for about 5 minutes, until the radicchio is slightly wilted.
Step 3
Transfer to a serving bowl and sprinkle with nuts. Serve.
