Step 1
Heat the olive oil in a large skillet over medium heat. Add the sliced red onion and sauté until soft, about 10 minutes, but do not let it brown.
Step 2
Add the lime juice and cook for another 3 minutes, until the liquid has slightly evaporated. Season with salt and pepper to taste. Remove from heat and add the cilantro.
