Vol-au-vents with caviar and raspberry jam

Ingredients

  • Puff Pastry 20 oz
  • Butter 0 oz
  • Egg white 2 pieces
  • Red Caviar 10 oz
  • Raspberry gin 0 oz
  • Dill 1 bunch

Step-by-Step Guide

Step 1

Dust the pastry with flour and roll it out slightly.

Step 2

Preheat the oven to 390°F.

Step 3

Using a cutter (or a glass) with a diameter of about 5 cm, cut out 60 circles from the pastry. Use a smaller cutter to cut rings from half of the circles.

Step 4

Place the larger circles on a baking sheet and brush with beaten egg white. Top with the rings and brush them with egg white as well.

Step 5

Put them in the oven and wait until the vol-au-vents rise and turn golden brown — this will take about 15–20 minutes.

Step 6

Remove from the oven and let cool.

Step 7

When the vol-au-vents are almost cool, gently press down the center, which will also rise, to form a cavity.

Step 8

Place a piece of butter in the center of each vol-au-vent. Then add a small dollop of jam, followed by the caviar, and garnish with dill.
