Venetian Style Pasta
Ingredients
- Red Onion 2 heads
- Olive Oil 1 tablespoon
- Pasta 5 oz
- Balsamic Vinegar 4 teaspoons
- Raisins 2 tablespoons
- Capers 4 teaspoons
- Toasted Pine Nuts 2 tablespoons
- Spinach 5 oz
Step-by-Step Guide
Step 1
Heat the oil in a non-stick skillet, sauté the onion for about 10 minutes until it becomes very soft. Meanwhile, cook the pasta according to the package instructions.
Step 2
Mix the vinegar, raisins, capers, and pine nuts (reserve some nuts for serving) with the onion, add seasoning to taste, and sauté for another minute to soften the raisins.
Step 3
Drain the pasta, add the onion mixture and spinach, and toss to combine.
Step 4
Divide into two servings, sprinkle with pine nuts on top, and serve.
