Vegetarian Vitamin Pasta
Ingredients
- Pasta 10 oz
- Pumpkin 1 piece
- Olive Oil 2 tablespoons
- Pine nuts ⅓ tablespoon
- Minced garlic 1 clove
- Champignon Mushrooms 4 pieces
- Spinach 10 oz
- Grated Cheese to taste
Step-by-Step Guide
Step 1
Cook the pasta in salted water according to the package instructions. Five minutes before it's done, add the pumpkin. Drain the water.
Step 2
While the pasta is cooking, heat half of the oil in a pan, lightly toast the pine nuts, then add the garlic and cook for a couple of minutes until softened. Add the remaining oil, increase the heat, and sauté the mushrooms for 2-3 minutes. Turn the heat to maximum, add the spinach, and sauté for another 1-2 minutes.
Step 3
Mix the pasta with the vegetables. Serve topped with grated cheese.
