Vegetarian Pasta Salad
Ingredients
- Farfalle Pasta 15 oz
- Olive Oil ¼ cup
- Garlic-Infused Olive Oil 1 tablespoon
- Carrot 1 piece
- Frozen Corn 15 oz
- Red Bell Pepper ½ piece
- Chives ½ piece
- Tomato 1 piece
- Chickpeas 1½ cups
- Salt 1 tablespoon
- Ground Black Pepper to taste
- Balsamic Vinegar 1 tablespoon
- Water 1½ tablespoons
- Minced garlic 1 clove
- Basil 2 tablespoons
Step-by-Step Guide
Step 1
Cook the pasta until al dente according to the package instructions. Drain and add a tablespoon of the olive oil and garlic mixture.
Step 2
In a bowl, combine the carrot, corn, pepper, chives, tomato, chickpeas, and chives. Season with salt and pepper, and mix well. Add the pasta and combine.
Step 3
To make the Provencal dressing, mix the remaining oil, vinegar, water, garlic, and basil. Season with salt and pepper, and mix well. Drizzle the dressing over the salad and toss. Let it sit for 30 minutes.
