Ingredients

  • Courgette 1 piece
  • Orange Bell Peppers 1 piece
  • Tomatoes 4 pieces
  • Nectarines 3 pieces
  • Olive Oil 2 tablespoons
  • Dijon Mustard 2 teaspoons
  • Meyer Lemon Juice 1 tablespoon
  • Balsamic Vinegar 1 teaspoon
  • Honey 1 tablespoon
  • Ground Dried Garlic to taste
  • Salt to taste
  • Ground Black Pepper to taste
  • Fresh Mint 2 tablespoons
  • Natural Yogurt 5 fl oz
  • Honey-Mustard Dressing 1 teaspoon
  • Soy Sauce 1 teaspoon

Step-by-Step Guide

Step 1

Soak wooden skewers in water to prevent them from burning on the grill.

Step 2

Mix the marinade ingredients in a small bowl: oil, vinegar, mustard, lemon juice, garlic, honey, salt, pepper, and chopped mint. Set aside.

Step 3

Wash the vegetables thoroughly. Cut the zucchini into large wedges, the bell pepper into pieces the size of 2 coins, the tomatoes into quarters, and the nectarines into 6 slices.

Step 4

Place the chopped vegetables in a large bowl, pour the marinade over them, and gently mix with your hands. Preheat the oven to grill mode at 390°F.

Step 5

Place a grilling rack on a baking sheet, alternately threading pieces of vegetables and fruits onto the skewers and laying them on the rack. Drizzle with the remaining marinade and place in the oven for 30 minutes. After 30 minutes, carefully open the oven, turn the kebabs, and move them to the top rack. Grill for another 10 minutes, watching closely to prevent burning.

Step 6

Mix the sauce ingredients: yogurt, honey mustard, soy sauce.

Step 7

Serve as an appetizer with yogurt sauce or as a main dish with rice.
