Vegetable Skewers with Mushrooms in Lemon Marinade

Ingredients
- Lemon 1 piece
- Olive Oil 2 tablespoons
- Dried Rosemary 1 tablespoon
- Salt ½ teaspoon
- Ground Black Pepper ¼ teaspoon
- Marinated cherries 16 pieces
- Courgette 1 piece
- Fresh Mushrooms 10 oz
- Spanish onions 1 head
Step-by-Step Guide
Step 1
Preheat the grill or barbecue.
Step 2
Grate the lemon zest into a large bowl and squeeze the lemon juice into it. Add the olive oil, oregano, salt, and black pepper. Mix well. Pour 2 tablespoons of the marinade into a small bowl.
Step 3
In the large bowl, add the cherry tomatoes, mushrooms, diced zucchini, and chopped red onion. Mix well.
Step 4
Thread the vegetables and mushrooms onto skewers, alternating them, and place them on the grill.
Step 5
Grill, basting with the remaining marinade, for about 8–12 minutes, turning occasionally.
