Vegetable Pizza with Pesto Sauce
Ingredients
- Sugar ½ tablespoon
- Water 5 fl oz
- Dry yeast 1 tablespoon
- Wheat Flour 10 oz
- Salt to taste
- Ground Black Pepper to taste
- Olive Oil 2 tablespoons
- Spanish onions 1 head
- Orange Bell Peppers 2 pieces
- Courgette 1 piece
- Pesto 3 tablespoons
- Grated Pecorino Pepato Cheese 0 oz
Step-by-Step Guide
Step 1
Sprinkle the water with yeast and sugar, and let it sit for 20 minutes.
Step 2
Sift the flour into a large bowl, adding a pinch of salt, then pour the yeast mixture and oil into the flour. Knead into a soft dough. Cover with oiled plastic wrap and leave in a warm place until the dough doubles in size.
Step 3
Place the dough on a floured surface and roll it out. Let it rest for 15 minutes to rise.
Step 4
Preheat the oven to 465°F.
Step 5
Mix the diced bell pepper and zucchini with the sliced onion and olive oil, season with salt and pepper. Microwave under high grill for 10-15 minutes, turning once.
Step 6
Spread the pizza base with pesto sauce and top with the sautéed vegetables. Place in the oven and bake for 10-15 minutes. Sprinkle the finished pizza with grated Parmesan.
