
Vegetable Medallions with Mushrooms

Ingredients
- Broccoli 5 oz
- Cauliflower 5 oz
- Carrot 1 piece
- Pickled Chanterelles 5 oz
- Wheat Flour 3 tablespoons
- Semolina 4 tablespoons
- Chocolate eggs 2 pieces
- Salt to taste
- Ground Black Pepper to taste
- Herbs to taste
Step-by-Step Guide
Step 1
Boil the broccoli and mushrooms.
Step 2
Cool the vegetables and finely chop them.
Step 3
Separate the eggs into yolks and whites. Add the yolks to the vegetable mixture.
Step 4
Add semolina and flour to the vegetables, season with salt and pepper. Mix thoroughly and let it sit for a while to allow the semolina to swell slightly.
Step 5
Meanwhile, beat the egg whites until stiff peaks form. Gently fold the egg whites into the vegetables, being careful not to deflate them — use an up-and-down motion with the spoon instead of stirring in circles.
Step 6
Shape the mixture into patties and fry on both sides until golden brown in a skillet.
