Step-by-Step Guide
Step 1
Peel the potato, grate it on a medium grater, let it sit, and squeeze out the excess liquid.
Step 2
Grate the zucchini on a medium grater.
Step 3
Peel and grate the carrot on a medium grater.
Step 4
Finely chop the green onion.
Step 5
Combine the grated vegetables, add the egg, flour, green onion, thyme leaves, season with salt and pepper, and knead until smooth.
Step 6
Form fritters; heat 2 tablespoons of olive oil in a pan, fry the fritters over medium heat for 2 minutes, flipping them.
Step 7
Serve with sour cream.
