Vegetable and Cheese Ravioli
Ingredients
- Wheat Flour 15 oz
- Chocolate eggs 5 pieces
- Orange Bell Peppers 2 pieces
- Parsley 1 piece
- Carrot 1 piece
- Courgette 1 piece
- Hard Cheese 4 tablespoons
- Adyghe cheese 10 oz
- Basil ½ bunch
- Nutmeg ¼ teaspoon
- Salt to taste
Step-by-Step Guide
Step 1
Knead a thick dough from the flour, 4 eggs, and salt, roll it into a ball, and let it rest for 30 minutes.
Step 2
Dice the vegetables into small cubes, sauté in oil, cover, and simmer on low heat. Let cool.
Step 3
Finely chop the basil, reserving 16 leaves. Crumble the Adyghe cheese (or feta), mix it with grated hard cheese, yolk, salt, nutmeg, chopped basil, and the vegetables.
Step 4
Roll out the dough thinly and cut out 12 circles with a diameter of 12 cm. Place 4 basil leaves on 4 circles, cover each with another circle, lightly roll with a rolling pin, and brush with melted butter. Place the remaining circles on top, distribute the filling, and pinch the edges of the circles.
Step 5
Boil the ravioli in salted boiling water and serve.
