
Vegan Scramble with Tomatoes

Description
This recipe is adapted from a cookbook on delicious vegan food. Unfortunately, a vegan sunny-side-up egg has yet to be invented, but a scramble—sure! With tomatoes, of course. Onion and herbs are optional. By the way, any tofu will work for the scramble—both firm and soft silken tofu. The first will yield a denser scramble, while the second will be more delicate.
Ingredients
- Tofu 10 oz
- Tomato 1 piece
- Turmeric a pinch
- Vegetable Oil 0 fl oz
- Salt to taste
Step-by-Step Guide
Step 1
Cut the tomato into cubes.
Step 2
Mash the tofu with a spoon, mixing in the turmeric until the mixture turns a yellowish color.
Step 3
Heat the vegetable oil in a pan, lightly sauté the tomatoes, add the tofu, and cook uncovered to evaporate as much liquid as possible. Season the scramble with salt to taste and serve hot.
