  • Apple juice with pulp 15 fl oz
  • Almond 10 fl oz
  • Wheat Flour 5 oz
  • Sugar 3 tablespoons
  • Flaxseeds 2 tablespoons
  • Apple Cider Vinegar 2 teaspoons
  • Baking Powder 2 teaspoons
  • Salt ½ teaspoon
  • Vanilla extract 1 teaspoon
  • Corn Starch 1 tablespoon
  • Spices to taste
  • Maple syrup 2 tablespoons

Step-by-Step Guide

Step 1

To prepare the apple sauce: Peel the apples, cut them into medium-sized cubes, and place them in a saucepan. Add 240 ml of apple juice, 1 tablespoon of cornstarch, ½ teaspoon of cinnamon, and maple syrup (can be substituted with sugar). Mix well, place on the heat, and bring to a boil. Once the sauce boils, reduce the heat and simmer for 20 minutes, stirring occasionally. Remove from heat. When the apples are soft, mash part of them slightly to thicken the sauce (the thickness can also be adjusted by the amount of cornstarch and syrup).

Step 2

To prepare the pancakes: Mix 240 ml of almond milk with 2 teaspoons of vinegar and 2 tablespoons of flaxseed meal. Let it sit for a while; the mixture should thicken slightly.

Step 3

In a bowl, sift 200 grams of wheat flour, add 2 teaspoons of baking powder, ½ teaspoon of salt, 1 teaspoon of cinnamon, ¾ teaspoon of ground ginger, ¼ teaspoon of nutmeg, and a pinch of ground cloves (add spices to taste, but don’t be shy: the pancakes are bland on their own).

Step 4

Make a well in the flour, pour in the milk mixture, 2 tablespoons of apple sauce, 160 ml of apple juice, sugar, and vanilla extract. Mix everything gently with a fork and let the batter rest slightly.

Step 5

Fry in a hot pan using your preferred method.

Step 6

Serve with apple sauce and any sour berries.
