Vegan Fondue
Ingredients
- Potatoes 15 oz
- Olive Oil 1 tablespoon
- Onion 2 heads
- Minced garlic 3 cloves
- Corn Flour 2 tablespoons
- Dry yeast 2 tablespoons
- Salt 1½ teaspoons
- Dry White Wine 1 cup
- Ground Nutmeg a pinch
- Rye Bread 5 oz
- Green Apples 15 oz
Step-by-Step Guide
Step 1
Boil the potatoes in salted boiling water for 5–8 minutes until tender. Drain and set aside.
Step 2
Heat the oil in a pan over medium heat. Add the onion and sauté for 15–20 minutes until soft and translucent. Add the garlic and cook for another 1–2 minutes.
Step 3
Meanwhile, mix the corn flour with 2 cups of cold water in a small container. Pour the mixture into the onions, reduce the heat, and let it simmer for 5 minutes, stirring occasionally. Add the nutritional yeast and salt, and let it simmer for another 5 minutes, stirring occasionally.
Step 4
Remove from heat, add the potatoes and ½ cup of wine. Blend until smooth with an immersion blender. Return to the heat and let it simmer for 5 minutes on low heat.
Step 5
Add the remaining ½ cup of wine, boil for 1 minute until thickened, stirring constantly. Transfer to a fondue pot, sprinkle with nutmeg, and serve with bread and apples.
