Description
This recipe uses medium-fat cottage cheese (9%).
Ingredients
- Cottage cheese 5 oz
- Chicken Egg 1 piece
- Coconut flakes 0 oz
- Erythritol 1½ tablespoons
- Vanillin 0 oz
- Butter 1 piece
- Unrefined Sunflower Oil 1 tablespoon
Step-by-Step Guide

Prepare the ingredients.
Step 2
In a wide deep bowl, combine the cottage cheese and the yolk. The egg white is not needed for this recipe.
Step 3
Add the coconut flour (10 g).
Step 4
Then add the vanillin.
Step 5
Add the erythritol (1 tablespoon).
Step 6
Knead the dough thoroughly. Let it rest for 5 minutes.
Step 7
Form a sausage shape from the dough on a board dusted with coconut flour.
Step 8
Cut the pancakes into pieces about 2 cm thick and shape them into rounds using a cup or glass. To do this, place the circle on the board, cover it with a cup, and then make quick circular motions with your hand while moving the cup.
Step 9
In a heavy-bottomed skillet, melt the butter and add the olive oil. Place the future pancakes onto it.
Step 10
Once the bottom side is browned, flip them over and reduce the heat to medium. Fry for another 5 minutes.
Step 11
Grind the erythritol into powder using a coffee grinder.
Step 12
Transfer the pancakes to a plate and sprinkle with the powdered erythritol.
Step 13
Serve with hot tea.
