Tuscan Chickpea Pasta

Description

Ingredients
- Chickpea 5 oz
- Green Tagliatelle Pasta 5 oz
- Baking Tomatoes 10 oz
- Olive Oil to taste
- Garlic 1 clove
- Fresh Rose Hips 1 bunch
- Salt to taste
- Red Long Chili Peppers to taste
- Grated Pecorino Pepato Cheese to taste
Step-by-Step Guide
Step 1
Soak the chickpeas for at least 4 hours (overnight is preferable).
Step 2
Drain the water. Place the chickpeas in a pot with fresh water. Bring to a boil over high heat.
Step 3
Reduce the heat to low and simmer covered for 50 minutes.
Step 4
Meanwhile, in a small saucepan, combine the tomatoes and oil. Set over low heat. Add the crushed garlic and rosemary. Stir occasionally, but ensure you can later remove the spices (special bags or strainers can be used for this, but they are not necessary).
Step 5
After 50 minutes, turn the heat under the chickpeas back to high, wait for it to boil, and add the pasta. Salt and cook, stirring, for 5 minutes.
Step 6
Remove the spices from the sauce.
Step 7
Drain the pasta. Add the sauce, pepper, and mix.
Step 8
Serve, sprinkled with grated cheese.
