Turnovers with pears, leeks, and Gruyère cheese
Ingredients
- Leek 5 oz
- Puff Pastry 20 oz
- Pears 5 oz
- Gruyère cheese 5 oz
- Sugar 1½ spoons
- Chicken Egg 1 piece
- Butter 2 spoons
- Salt to taste
- Ground Black Pepper to taste

Step-by-Step Guide
Step 1
In a heavy skillet over medium heat, melt the butter. Add the chopped leek, stirring continuously for one minute, then reduce the heat and cover the skillet with a lid. Cook for about seven minutes, stirring occasionally, until the leek begins to brown.
Step 2
Add finely chopped pears (ripe but firm) to the leeks and sprinkle with sugar. Increase the heat, and when all the liquid evaporates, season the pears and onions with salt and pepper, transfer to a bowl, and let cool. Stir in the chopped spring onions and grated cheese.
Step 3
Using a 10-centimeter round cutter, cut out eight circles from the puff pastry and roll them out to a diameter of 12.5 centimeters.
Step 4
Place the filling on one half of each dough circle, brush the edges with beaten egg. Cover the filling with the other half of the circle, pinch the edges together, and press them firmly with a fork to seal well.
Step 5
Brush the pastries with beaten egg, poke the dough several times with a toothpick, and place them in a cool spot for twenty minutes.
Step 6
Preheat the oven to 390°F and bake the turnovers for about eighteen minutes, until the dough has risen and turned golden brown. Serve warm.
