Turkish Mini Pizza

Ingredients

  • Wheat Flour 5 oz
  • Coarsely Ground Rye Flour 5 oz
  • Salt to taste
  • Water 5 fl oz
  • Dry yeast 1 teaspoon
  • Olive Oil 2 tablespoons
  • Onion 1 head
  • Garlic 1 clove
  • Rack of Lamb 10 oz
  • Ground Black Pepper to taste
  • Ground Cumin ½ teaspoon
  • Tomato Puree 2 tablespoons
  • Parsley 0 oz
  • Meyer Lemon Juice 1 tablespoon
  • Butter 2 tablespoons

Step-by-Step Guide

Step 1

Mix the flour, yeast, and salt in a bowl. Add water and oil, and knead the dough. Knead for 5-10 minutes depending on whether you are doing it by hand or in a mixer, until the dough is elastic and smooth.

Step 2

Place in an oiled bowl, cover with plastic wrap, and let rise in a warm place for an hour, until it doubles in size.

Step 3

Preheat the oven to 200°C. To make the lamb filling, sauté the onion and garlic in oil until soft. If you add a pinch of salt, they should not brown. Add the ground lamb and spices, and then add the tomato puree.

Step 4

Stir the meat to avoid clumps and cook for 10 minutes until the lamb is pink. At the end, add the parsley and lemon juice, and taste for salt and pepper.

Step 5

Punch down the dough to release excess air and divide it into 25 small pieces, about 15 g each. Roll them into circles with a diameter of 6-7 cm. Leave them on baking sheets, covered with a towel, for 10 minutes.

Step 6

Place 1 teaspoon of filling in the center of each circle, spreading it over the dough. Brush the dough with melted butter, especially around the edges, and bake for 8-10 minutes until they are firm but not browned. When you take them out of the oven, cover with a towel. Unfortunately, it will get dirty, but this is necessary to prevent a hard crust from forming. The flatbreads should be soft enough to easily roll up. Sprinkle with parsley and serve with lemon wedges and sauce.
