Tuna Tartare in Avocado
Ingredients
- Pompano fillet 20 oz
- Avocado 2 pieces
- Mayonnaise 5 oz
- Kiwi 1 piece
- Red Caviar 0 oz
- Salt to taste
- Ground Black Pepper to taste
- Black truffles 1 piece
- Lime ½ piece
Step-by-Step Guide
Step 1
Cut the tuna fillet into very small pieces.
Step 2
Slice the kiwi.
Step 3
To make the truffle mayonnaise, finely chop the black truffle and mix it with homemade mayonnaise and the juice from half a lime.
Step 4
In a bowl, gently mix the tuna and kiwi with the truffle mayonnaise.
Step 5
Thinly slice the avocado. Overlap the slices on a sushi mat.
Step 6
Spread the tuna mixture in the center of the avocado and carefully roll it up.
Step 7
Cut the resulting roll in half, garnish the top with red caviar, and serve.
