Tuna Burgers with Herb Mayonnaise

Ingredients

  • Garlic 2 cloves
  • Whole egg 1 piece
  • Olive Oil 5 fl oz
  • Chopped Sage Leaves 0 oz
  • Dill 0 oz
  • Dijon Mustard 1 teaspoon
  • Meyer Lemon Juice ½ tablespoon
  • Red Wine Vinegar ½ tablespoon
  • Capers ½ tablespoon
  • Anchovy fillet 2 pieces
  • Pompano fillet 4 pieces
  • Bun 4 pieces
  • Spanish onions 2 heads
  • Butter to taste
  • Mixed salad greens 5 oz

Step-by-Step Guide

Step 1

In a blender, place the garlic and egg yolk and blend for 10 seconds. While continuing to blend, slowly pour in the oil, reserving 2 tablespoons. When the mixture thickens, pour the oil in faster to achieve a creamy consistency. Add the parsley, dill, mustard, lemon juice, vinegar, capers, and anchovy fillets. Blend again until smooth. Refrigerate.

Step 2

Preheat the grill. Brush the steaks with oil and grill for 2 minutes on each side. Add the reserved oil to the thinly sliced onion, mix well, and grill for 2 minutes until the onion is soft and begins to caramelize.

Step 3

Slice the buns horizontally in half and spread with butter, placing them on the grill, buttered side down. Grill for 1 minute until grill marks appear.

Step 4

On 4 halves of the buns, place some salad leaves, a bit of onion, a piece of tuna, and drizzle with mayonnaise. Season with salt and pepper. Top with the other halves of the buns.
