Tropical Quinoa
Ingredients
- Quinoa 4 tablespoons
- Maple syrup 1 tablespoon
- Ground Cinnamon 1 teaspoon
- Coconut Milk 5 fl oz
- Coconut flakes 2 tablespoons
- Canned Pineapple Chunks 3 pieces
- Toasted Sesame to taste
- Strawberry to taste
Step-by-Step Guide
Step 1
Rinse the quinoa.
Step 2
Combine the quinoa and 1.5 cups of water in a saucepan, place over medium heat, and bring to a boil. Reduce the heat slightly and cook until done, about 15 minutes. Remove from heat and let cool.
Step 3
Pour the coconut milk into another saucepan, add the cooked quinoa, pineapple chunks in syrup, and coconut flakes. Stir in the maple syrup and add a pinch of cinnamon. Place the saucepan over medium heat and cook, stirring, for about 5 minutes until all the liquid evaporates. Remove from heat.
Step 4
Serve the quinoa with fresh strawberries and toasted pecans to taste.
