  • Tortillas 4 pieces
  • Eggplant 1 piece
  • Tomato 1 piece
  • Onion 1 piece
  • Carrot 1 piece
  • Bell pepper 1 piece
  • Ketchup 4 tablespoons
  • Sour Cream 4 teaspoons
  • Salt to taste
  • Vegetable Oil 4 tablespoons
  • Milk 5 fl oz

Step-by-Step Guide

Step 1

Cut the eggplant, carrot, bell pepper, and onion into strips and sauté in oil for 15-20 minutes over medium heat. Add salt and spices (herbs de Provence).

Step 2

Beat the eggs with milk and salt to make an omelet. Place the omelet on the tortilla.

Step 3

Top the omelet with thinly sliced tomatoes, add salt, ketchup, and sour cream. Place on one half of the tortilla.

Step 4

Add the sautéed vegetables on top. Place on one half of the tortilla.

Step 5

Cover with the other half of the tortilla. Place in the microwave for 1 minute (or in the oven for 3-5 minutes).
